Couscous Salad

  • 100 g couscous
  • 200 ml vegetable stock
  • 2 spring onions sliced
  • 1 red pepper sliced
  • 0.5 cucumber diced
  • 50 g feta cheese roughly chopped
  • 2 tbsp pesto
  • 2 tbsp pine nuts


  • Tip the couscous into a large bowl and pour over the stock. Cover, then leave for 10 mins until fluffy and all the stock has been absorbed.
  • Meanwhile prepare the other ingredients and then add to the couscous once it has absorbed the stock.
